Gluten free date bread with ginger/Pain sans gluten aux dattes et au gingembre

What could be more comforting than a slice of date bread served with your favorite tea or coffee? This delicious loaf is perfect for any time of the day, breakfast, snack or dessert.  And the texture is so moist, you will even forget it is gluten free.


Yield: one loaf

- 1½ cup (200g) dates, roughly chopped
- ¾ cup (180ml) boiling water

- ¾ cup (120g) brown rice flour
- ½ cup (85g) white rice flour
- ½ cup (85g) potato starch
- ¼ cup (30g) arrowroot
- 1 tsp xanthan gum
- 3 tsp baking powder
- 2 tbsp flaxseed meal (optional)
- ½ tsp cinnamon
- ½ tsp allspice

- 3 eggs
- ½ cup (90g) coconut sugar
- 1/3 cup (80ml) vegetable oil of your choice
- 2 tbsp candied ginger (chopped) OR 1 tbsp fresh grated ginger



Preheat oven at 375F (190C).

Put dates in a bowl, boil water and pour ¾ cup (180ml) over dates, with a pinch of salt.  Keep aside.

Line the bottom of a 5½x10 (14cmx26cm) loaf pan with parchment paper and lightly grease the sides. (If your pan is wider, you should cook the loaf a little less longer.)

Sift together dry ingredients, from brown rice flour to allspice.  Keep aside.

In a large bowl, beat together, with a fork, the eggs, the coconut sugar and the oil.  Add the ginger and mix well.

Stir in the dates (with the water) and mix again.

Add dry ingredients and combine thoroughly.

Pour mixture in the loaf pan and level with a spatula.

Cook 45-50 minutes.

10-15 minutes after you took it out of the oven, take the loaf out of the pan and let it cool on a rack.

Y a-t-il plus réconfortant qu'une belle tranche de pain aux dattes servie avec votre thé ou café préféré?  Ce délicieux cake est parfait à toute heure du jour, que ce soit au petit déjeuner, au goûter ou après dîner.  Et sa texture est si moelleuse que vous oublierez même qu'il est sans gluten.


- 1½ tasse (200g) de dattes, coupées en gros morceaux
- ¾ tasse (180ml) d'eau bouillante

- ¾ tasse (120g) de farine de riz brun
- ½ tasse (85g) de farine de riz blanc
- ½ tasse (85g) de fécule de pomme de terre
- ¼ tasse (30g) d'arrowroot
- 1 c. à thé (cc) de gomme de xanthane 
- 3 c. à thé (cc) de levure chimique 
- 2 c. à soupe de graines de lin moulues (facultatif)
- ½ c. à thé (cc) de cannelle 
- ½ c. à thé (cc) de poivre de la Jamaïque

- 3 oeufs
- ½ tasse (90g) de sucre de coco
- 1/3 tasse (80ml) d'huile végétale de votre choix
- 2 c. à soupe de gingembre confit (haché) OU 1 c. à soupe de gingembre frais, râpé 


Préchauffer le four à 375F (190C).

Mettre les dattes dans un bol, faire bouillir de l'eau et en verser ¾ de tasse (180ml) sur les dattes, avec une pincée de sel.  Réserver.

Couvrir le fond d'un moule à pain de 14cmx26cm (5½x10 pouces) de papier parchemin et graisser légèrement le pourtour.  (Si votre moule est plus large, réduire légèrement le temps de cuisson.)

Bien tamiser les ingrédients secs, de la farine de riz brun au poivre de la Jamaïque.  Réserver.

Dans un grand bol, battre ensemble, à la fourchette, les oeufs, le sucre de coco et l'huile.  Ajouter le gingembre et bien mélanger.

Ajouter les dattes (avec l'eau) et mélanger à nouveau.

Ajouter les ingrédients secs et mélanger jusqu'à ce que le tout soit bien humecté.

Transférer le tout dans le moule à pain et égaliser à l'aide d'une spatule.

Cuire 45-50 minutes.

10-15 minutes après l'avoir sorti du four, retirer le cake du moule et le laisser refroidir sur une grille.

Gluten free whole orange and hazelnut cake/Gâteau sans gluten à l'orange entière et aux noisettes

This fabulous orange cake was one of my favorites in my pre-glutenfree days and I missed it so much I decided to create a gluten free version.  You won't believe how moist this cake is, not to mention its intense orange flavor.

- 1 small seedless organic orange (about 2 inches, or 5-6 cm, diameter)
- 1½ cup (160g) hazelnut meal
- 6 tbsp sorghum flour
- 3 tbsp potato starch
- 2 tsp baking powder
- 3 eggs
- ¼ cup (60ml) honey
- 2/3 cup (100g) coconut sugar

Wash the orange and put in a medium pot.  Cover with hot water, bring to a boil, reduce and let simmer for one hour.  Take out from the pot and let it cool a little.

Preheat oven at 350F (180C).

Line the bottom of a 9 inch (23cm) round pan with parchment paper (very important, otherwise the bottom of the cake will burn).

Sift together the hazelnut meal, the sorghum flour, the potato starch and the baking powder.  Keep aside.

In a large bowl, whisk together the eggs with the honey and the coconut sugar.

Blend the orange in a mixer until completely smooth and add to the eggs and sugar.  Mix well.

Add in dry ingredients and mix well with a spatula.

Transfer mix to the pan and cook 25 to 30 minutes.  Be careful not to overcook.

If you wish, you can brush some honey on top and garnish with sliced almonds.

Ce fabuleux gâteau à l'orange entière était l'un de mes préférés avant que je ne commence à cuisiner sans gluten et il me manquait tellement que j'ai décidé de créer une version sans gluten.  Il est d'un moelleux incroyable, sans parler de son intense saveur d'orange.  Vous pouvez, si vous les souhaitez, le badigeonner d'un peu de miel et le garnir d'amandes effilées.

- 1 petite orange biologique sans pépins (5-6 cm de diamètre)
- 1½ tasse (160g) de noisettes moulues
- 6 c. à soupe de farine de sorgho
- 3 c. à soupe de fécule de pommes de terre
- 2 c. à thé (cc) de levure chimique
- 3 oeufs
- ¼ tasse (60ml) de miel
- 2/3 tasse (100g) de sucre de coco


Laver l'orange et la mettre dans une casserole de taille moyenne.  Couvrir d'eau chaude, amener à ébullition, réduire le feu et laisser frémir une heure.  Retirer de la casserole et laisser un peu refroidir.

Préchauffer le four à 350F (180C).

Couvrir de papier parchemin le fond d'un moule à gâteau de 9 pouces (23cm) (très important, sinon le fond de votre gâteau brûlera).

Tamiser ensemble les noisettes moulues, la farine de sorgho, la fécule de pommes de terre et la levure chimique.  Réserver.

Dans un grand bol, battre au fouet les oeufs avec le miel et le sucre de coco.

Mettre l'orange dans un mixer et réduire en purée lisse.  Ajouter cette purée au mélange d'oeufs et bien mélanger.

Ajouter les ingrédients secs et bien mélanger à l'aide d'une spatule.

Transférer dans le moule et cuire de 25 à 30 minutes.  Attention de ne pas trop cuire.  Laisser refroidir une demi-heure avant de démouler.
